During summer break when we visited China, one of my biggest treasures I kept was when I learned how to make pickled cucumbers. When we were home in America, I tried the recipe even before I stopped jet lagging. When I saw stacks and stacks of watermelon peels every week in my kitchen, I realized I can try to make new dishes out of these cucumber recipes. It turned out that watermelon peels can make many delicious dishes.
Pickled Cucumbers and Watermelon Peels
Use the little kitchen tool to easily peel the watermelon and cut into small pieces.
cut green onions, garlic, ginger, cinnamon, Chinese pepper, and aniseed.
Turn the heat on to medium high. Add 2 teaspoons of olive oil. When the oil starts to get hot, add all ingredients into the oil and stir.
When it comes out fragrant, add soy sauce, and cooking wine (wine: soy sauce, 2:1 ) to bring it to boil. Do not add any water.
Turn off the stove and let the sauce cool down. Then add cucumbers and watermelon peels into the sauce. Let the sauce covers the peels and put into the refrigerator over night.
This is what the final product looks like the next day.
