Mom’s Love Starts From Breakfast

When I was a child, we were very poor. Although the choices for meals were simple and limited,  my mother cooked breakfast for us every morning. Before going to school, we always ate breakfast every morning. Now, it’s my turn to prepare breakfast for my sons every morning. The difference is that I am very fortunate to have many choices to choose from.

Breakfast is an important part of a healthy lifestyle. Morning is usually the most stressful time, so it’s especially important to cook a delicious, balanced breakfast fast.

Soymilk with peanuts, walnuts, and sesame. Hashbrowns and cucumber slices. Both together take less than thirty minutes to prepare.

 Soy Milk with Peanuts, Walnuts, and Sesame

1 cup soybeans( serves 4 people for two days), 1/2 cup peanuts. Soak them for overnight.

(Do not soak) 1/2 cup walnut, 1/3 cup sesame seeds.

Soybeans and Peanuts soaked overnight.

This blender is a must-have kitchen tool.

Add soybeans, peanuts, walnuts, sesame seeds and water into the blender.

Finely blend all ingredients.

While the blender is working, prepare the potatoes.

Wash the potatoes.

 Hash the potatoes.

Add 1/2 cup flour, 2 eggs, a pinch of black pepper, 1/3 Tsp salt

Mix together

Add 1 tbsp cooking oil to a nonstick pan. turn on medium heat.

When the oil is hot, pour a pancake-sized portion of the batter into the pan. Pan-fry both sides until golden brown.

Bring water to a boil.

Pour blended ingredients into boiling water.

Stir consistently

To prevent spillover, add small amounts of cold water into the pot. Repeat 3 times or cook for 5 mins at low heat

Be very cautious, cook the soymilk thoroughly to prevent consumption of uncooked soybeans.

Uncooked soybeans contain lectin which can cause intestinal problems!

Healthy and balanced breakfast. Takes less than thirty minutes to prepare!
