Homemade Chinese Longevity Noodles

Many families love noodles, especially people from the northern part of China. Noodles are one of our favorite foods. The noodles we eat on the day of someone’s birthday are called longevity noodles. They are a symbol of health and happiness. I was overjoyed to receive a noodle maker as this year’s Mother’s Day gift. The noodle maker is very easy to use. This is one of the most helpful kitchen tools for both working women and housewives. Today I am going to teach you how to easily make noodles at home.

Recipe for Longevity Noodle: 3 cups all-purpose flour, 3/4 cup water, 1/2 teaspoon salt, mix up together. The dough needs to be hard.

The dough is ready

Egg noodle ingredients: 4 cups all-purpose flour, 3/4 cup water, 1/2 teaspoon salt, 3 medium size eggs, mix all up together. The dough needs to be hard. Please add little bit more flour, if the dough is wet because of eggs.

Cover the dough with the film. Let the dough rest for 30 minutes.

Cut the dough into 4 pieces. Place one piece of dough on the top of the noodle maker to press. Adjust the thickness of the noodle maker as needed. Repeat a few times as needed to press the dough.

Homemade longevity noodle soup recipe: Boil noodles first, then transfer them into a separate bowl. Add pork bone broth into another pot and bring it to boil. Add 2 eggs to cook until it ready, add diced carrots and mushrooms. Turn off the stove and add diced green onions and cilantro. Add salt to personal preference. A bowl of homemade longevity noodles is a must for the birthday boy or girl.
